Browned Butter Blondies with Ruby Chocolate

If you've never heard of ruby chocolate, don't worry, you're not alone. No, it's not colored white chocolate. No they don't do anything crazy to flavor it or change it. It's REALLY pink chocolate and I REALLY love it.

I was first exposed to ruby chocolate in Norway where I bought a stupid amount of ruby chocolate Kit Kats at various train stops and convenience stores. Of course its shiny newness intrigued me, but what really got me was the unique flavor. Slight sweetened and tangy like fresh berries, this is a kind of chocolate I can really get behind.

Finding it in stores is difficult and buying it online just seemed a little out of my price range, so you can imagine how excited I was to find that Trader Joe's began selling it! I quickly snatched up three bags and started thinking about how to best use it.

It's subtle flavor didn't need to be muted by competing ingredients, and I knew immediately that my browned butter blondie would be the perfect vehicle and that Valentine's Day would be the perfect occasion.

They're all gone. Every last one. Some were wrapped up to be taken home to spouses. Some wrapped up to enjoy after work. Some delivered to friends in other buildings. All of that just makes me so happy. But what makes me happiest is when someone comes to my office door and says that they've heard I have treats hidden somewhere. Sadly, I had to dash her hopes of trying it because they were ALL snatched up faster than anything I've ever brought in. I was super bummed because this darling doctor is also a huge cook and baker and she would have LOVED them!!!! 

Pick up 4 bags of them at Trader Joe's and give my recipe a try if you want!!!

Ingredients
1 stick of butter, browned and slightly cooled
1 cup brown sugar
1 large egg, beaten
1 tablespoon vanilla extract
1 cup all-purpose flour
1/4 teaspoon salt
100 grams ruby chocolate, melted
260 grams ruby chocolate
100 grams ruby chocolate, meleted, reserved for drizzling over the top

After browning your butter, add to it your brown sugar whisk by hand for one minute.

Add beaten egg and vanilla and whisk by hand for one minute. Stir in 100 grams of melted ruby chocolate and mix well.

Sift your flour and add it to your wet ingredients. Add salt. Gently fold dry ingredients into wet until just combined and batter starts to pull away from the bowl. Stir in 260 grams of ruby chocolate chips.

Pour into a greased and parchment paper lined 8x8 pan. Bake at 350 degrees for 21 minutes on the second highest oven rack. This will yield an ooey gooey blondie.

Allow the blondies to cool and once cool to the touch, drizzle with 100 grams of melted ruby chocolate.

Black Treacle Cookies

I feel the need to issue a disclaimer: I do not particularly like cookies. I'll pass on them every time they're offered and I thoroughly dislike making them. Until now. These black treacle cookies are quite possibly my favorite cookie, ever, and I will keep a constant supply of black treacle in my cabinets so I can make these. Not Your Mother's Mac & Cheese

We rarely ever had that blue boxed stuff with cheese powder when I was a kid. In fact, I distinctly remember already knowing how to make a roux when I took my first Home Economics class in grade 7. When I say that we made things from scratch in my house, I mean it!! We ate good food. We ate well. But I still enjoyed that blue boxed stuff with cheese powder when I was a kid.
